This
is
a
quick
and
delicious
side
dish
which
is
easy
to
make
and
can
be
served
chilled
with
a
wide
variety
of
dishes.
Since
all
the
ingredients
are
uncooked,
they
still
maintain
all
their
healthy
vitamins
and
minerals
many
of which are usually lost through cooking.
What You’ll Need
1 Small head of Broccoli
1 Small Red Bell Pepper
1 Small Green Bell Pepper
1 Small Zucchini
1 Small Yellow Squash
1 Sweet Onion
3 Small Mushrooms
2 Small Plums
2 Small Peaches
Handful of fresh Cilantro (roughly chopped)
Small handful of shelled peanuts
Juice of 1 Lime
How It’s Done
Simply
dice
everything
up
into
small
pieces.
The
peanuts
can
be
left
whole
if
desired.
Place
everything
into
a
bowl
and
season
with Kosher Salt, fresh ground Pepper and the juice of a Lime.
Gently fold the mixture until fully incorporated, refrigerate and serve chilled.
