What you’ll Need Filling 12-14 RIPE medium peaches (about 3.5lbs) - peeled, pitted and sliced 1/4 cup Sugar 1 Tbs Lemon Juice 2.5 tsp Ground Cinnamon 3/4 tsp Ground Ginger 1/2 tsp Allspice 1/4 tsp Pure Vanilla Extract How it’s Done Preheat oven to 350F In a bowl mix together all the ingredients for the filling mix, thourghly coating all the peach slices. Set aside to allow the natural juices to be drawn out. Place Butter in a 9”x13” baking dish and set in the oven to melt while it is preheating. In a seperate bowl, stir together the Flour, Sugars and Baking Powder. Add Milk and mix until blended. Carefully remove the baking dish with the melted butter from the oven and pour the batter mix evenly over the butter. DO NOT MIX OR STIR THE BATTER MIX INTO THE BUTTER, THIS WILL ELIMINATE THE DEVELOPMENT OF CRUNCHY EDGES. Pour the peach filling evenly over the batter to within 1” of the side walls of the dish. Bake for 45 min. or until the batter becomes golden brown. Serve warm alone or with ice cream. Tips If peaches are out of season, you can substitute the fresh peaches, sugar and lemon juice for 3 large cans of peaches which have been partially drained. It is best to use plain peaches and the spices listed above. Otherwise adjust your spices accordingly. You can also make Blueberry Cobbler by substituting the peaches and ginger with Blueberries and 1/4 tsp of nutmeg. Always remember. Whenever making anything using fresh fruit such as Cobblers, Banana Breads etc. always allow the fruit to ripen completely. The more ripe the fruit…the more intense the flavor. Easiest way to peel a peach is to blanch it. Fill one pot with water and bring it to a bowl. Fill another pot with ice water. Using a spoon or tongs carefully lower your peach into the boiling water for about 30-40 seconds. Remove and immediately place in the ice water for about 10 seconds. Remove and the skin will just slide right off.
