This
is
a
delicious
rice
dish
which
can
be
used
as
a
quick
side
dish
or
a
meal
in
itself.
Using
a
readily
available
yellow
rice
mix
with
saffron,
found
at
most grocery stores, makes it especially easy to make.
What You’ll Need
1 can (14oz) Whole Kernel Corn - drained
1 can (14oz) Black Beans - drained & Rinsed
1 pkg (10oz) Yellow Rice with Saffron
1 Lime
½ cup Fresh Cilantro - rough chop
How It’s Done
Cook rice according to package directions
To
cooked
rice
add
the
corn,
black
beans,
cilantro,
and
the
juice
of
1
lime.
Gently
stir
until
blended,
being
careful
not
to
“mash”
the rice.
Tips
Although
this
dish
is
delicious
served
warm
it
is
especially
good
the
following
day.
Refrigerate
overnight
and
remove
thirty
minutes to an hour before serving.
