are
light,
crispy
and
highly
addictive.
like
the
old
commercial says....you can't eat just one.
The
best
thing
about
this
batter
is
it
can
also
be
used
to
fry
up
a
variety
of
other things like; fish, pickles, green beans etc.
I
have
also
included
a
recipe
for
an
excellent
dip
for
those
delicious
onion

What You’ll Need
- (for the Onion Rings)
4 - Cups canola or peanut oil
2 - yellow sweet onions
2 - Cups buttermilk
2 - Cups all-purpose flour (divided)
12 oz - beer (medium body)
1 - tsp garlic - granulated
1 - tsp salt - (preferably Kosher)
1 - tsp pepper - ground
1 - tsp onion powder
1 - tsp paprika
How it’s Done
Preheat oil to 350°F in dutch oven or deep fryer
Skin onions and slice into ½” circles, separating the rings
Soak the onions with 2 cups of Buttermilk in either a large bowl or ziploc baggie for 1 hour.
In one bowl combine 1 cup of flour and the beer. Stir the batter until well blended. Set aside
In
a
second
bowl
-
or
better
yet
a
large
ziploc
bag
-
combine
the
remaining
cup
of
flour
and
all
the
dry
spices
together
until
well
blended.
Remove
each
onion
slice
from
the
buttermilk
shaking
off
any
excess
and
place
into
the
dry
flour
mixture
until
well
coated.
You
can do several at a time if you wish.
One
at
a
time
remove
onion
rings
from
the
dry
flour
shaking
off
excess,
dredge
in
the
batter
(again
shaking
off
excess)
and
place
immediately into hot oil. Be sure not to crowd them, doing several batches as needed.
Once golden brown, remove from oil and drain on paper towels.
What You’ll Need - (for the Dip)
2 cups - Sour Cream
¾ cup - Mayonnaise
3 Tbs - Sundried Tomatoes
¼ cup - Red Bell Pepper - roasted
1 Tbs - Lime Juice
½ tsp - Pepper - ground
1 tsp - Salt
3 Tbs - White Wine
1 Tbs - Garlic - minced
How it’s Done - (for the Dip)
Combine all ingredients in a food processor and process until well blended.
Refrigerate for 1 hour.
Tips
For those bacon lovers out there. Add a couple strips of cooked chopped up bacon.
