Vegetable & Fruit Medley

This is a quick and delicious side dish which is easy to make and can be served chilled with a wide variety of dishes.

Since all the ingredients are uncooked, they still maintain all their healthy vitamins and minerals many of which are usually lost through cooking.

What You’ll Need

  • 1 Small head of Broccoli
  • 1 Small Red Bell Pepper
  • 1 Small Green Bell Pepper
  • 1 Small Zucchini
  • 1 Small Yellow Squash
  • 1 Sweet Onion
  • 3 Small Mushrooms
  • 2 Small Plums
  • 2 Small Peaches
  • Handful of fresh Cilantro (roughly chopped)
  • Small handful of shelled peanuts 
  • Juice of 1 Lime

  How It’s Done

  • Simply dice everything up into small pieces. The peanuts can be left whole if desired. Place everything into a bowl and season with Kosher Salt, fresh ground Pepper and the juice of a Lime.
  • Gently fold the mixture until fully incorporated, refrigerate and serve chilled.
