Southwestern Saffron Rice

This is a delicious rice dish which can be used as a quick side dish or a meal in itself. Using a readily available yellow rice mix with saffron, found at most grocery stores, makes it especially easy to make.

What You’ll Need

  • 1 can (14oz) Whole Kernel Corn - drained
  • 1 can (14oz) Black Beans - drained & Rinsed
  • 1 pkg (10oz) Yellow Rice with Saffron
  • 1 Lime
  • ½ cup Fresh Cilantro - rough chop

  How It’s Done

  • Cook rice according to package directions
  • To cooked rice add the corn, black beans, cilantro, and the juice of 1 lime. Gently stir until blended, being careful not to “mash” the rice. 


  • Although this dish is delicious served warm it is especially good the following day.  Refrigerate overnight and remove thirty minutes to an hour before serving.
